Delicious Pumpkin recipes for Navratri

Navratri 2022: The goddess Durga is the focus of this nine-day festival. Hindu believers fast for nine days to please Goddess Durga and get her blessings on this day, which is considered fortunate. During Navratri, women have a lot going on, including pujas, religious events, social gatherings, and fasting. Fasting properly can help you tone and detoxify your body, but doing it wrong can drain your energy and make you irritable. Include meals that will support your observance of all religious tenets while still providing your body with the nutrition and energy it requires. Pumpkin is a fantastic food to use in your fasting meals because it is filling and simple to prepare.

  1. Pumpkin Halwa

Pumpkin Halwa

Ingredients:

  • Ghee – 4 Tsp
  • Pumpkin – 200 grams
  • Whole Milk – 1 cup
  • Cardamom powder – 1 Tsp
  • Condensed milk – 300 grams
  • Grated Coconut – 1/2 cup
  • Roasted Cashew nuts
  • Roasted Almond Flakes
  • Chopped Pistachios

Method:

  1. Place 1 large pumpkin, weighing around 200 gms, in a large skillet. Add 3 to 4 tsp of ghee, and sauté for 5 minutes.
  2. Until the mixture is thick and the milk has evaporated, cook the vegetable with 1 cup of whole milk.
  3. Add 300 gms of condensed milk, 1/2 cup of freshly shredded coconut, and 1 tsp of cardamom powder.
  4. Stirring the mixture continuously until it thickens over a medium flame is necessary.
  5. Combine this mixture with the roasted almond flakes and cashew nuts.
  6. Cook the mixture while adding 2 teaspoons of ghee until it is nicely dried.
  7. Add some chopped pistachios as a garnish, and the pumpkin halwa is ready to be served.
  1. Pumpkin Raita

Pumpkin Raita

Ingredients:

  • Pumpkin (grated or chopped) – 1 cup
  • Yogurt 1 cup
  • Milk 1/4 cup
  • Chopped coriander and green chilies
  • Salt to taste
  • Red chili powder
  • Roasted cumin powder
  • Mint to taste
  • Black salt (a pinch)
  • Sugar (1/2 teaspoon)

Method:

  1. In a skillet, heat some water. Add the grated pumpkin and cook for around 5 minutes.
  2. Pour all the water out after that, set it aside, and then combine milk, yoghurt, and pumpkin in a bowl.
  3. Next, combine sugar, salt, black salt, mint powder, red chili powder, and cumin powder.
  4. The prepared pumpkin raita. Serve it with chapattis or rice as raita or as a dip.

3. Pumpkin Pudding

Ingredients:

  • Ghee – 4 tsp
  • Pumpkin – 200 grams
  • Whole milk – 1 cup
  • Cardamom powder – 1 tsp
  • Condensed milk – 300 grams
  • Grated coconut – 1/2 cup
  • Roasted Cashews
  • Roasted Almond Flakes
  • chopped pistachios

Method:

  1. Place 200 grams of one large pumpkin and 3 to 4 spoons of ghee in a large pot and cook for 5 minutes.
  2. Cook the vegetable with 1 cup of milk until the mixture is thick and the milk has evaporated.
  3. Add 300 grams of condensed milk, 1 teaspoon of cardamom powder, and 1/2 cup of freshly grated coconut.
  4. Stirring the mixture over a medium flame until it thickens.
  5. Combine this mixture with toasted almond flakes and cashew nuts.
  6. Cook the mixture while adding 2 teaspoons of ghee until it is nicely dried.
  7. Serve the pumpkin halwa with some chopped pistachios as a garnish.
